You may change the cards by simply touching the card to get the back of the deck image and then re-select the desired cards via the suit and card value buttons. The "Power Rating" gives you the relative strength of your pocket cards from 0 to 40. To reset all the cards you give your iPhone or iPod touch a shake or tap to the side.
