Hiroyuki Sakai

Biography: Wanting to make sure he'd never be hungry. Sakai set out to be a chef and started his career at Shin Osaka Hotel. He soon grew tired of the feudal style of apprenticeship Japan was steeped in. So he travel alone to Perth Australia at only 19 years of age. After his tour at Hotel Oriental Sakai traveled back to Japan and worked three years at Ginza Shiki. While there he studied under Fujio Shio Saki's predecessor as to Japanese French chef. Sakai has worked all around Japan allowing him to master refined city styles of cooking and more relaxed country or home cooking styles. With work at Coco Palms of Aoyama and John Kanaya of Roppongi Sakai gained even more skill and prestige. Sakai went on to open his own restaurant La Rochelle in Aoyama where he works to this day.
